Baking Powder substitutes

The best substitute for baking powder is baking soda + cream of tartar: Per 1 tsp baking powder: 1/4 tsp baking soda + 1/2 tsp cream of tartar, mixed and used immediately. Chemically the same pairing that is in the tin, but single acting, so it starts fizzing the moment it gets wet. Get the batter into the oven straight away.

Why it matters. A complete leavener: bicarbonate of soda plus a built-in dry acid, so it produces carbon dioxide on its own once wet and again in the oven. Omit it and cakes, scones and pancakes bake dense and flat.
