Worcestershire Sauce substitutes

The best substitute for worcestershire sauce is soy sauce + vinegar + sugar: Per 1 tbsp Worcestershire: 1 tbsp soy sauce + 1/2 tsp cider vinegar + 1/4 tsp sugar + a pinch of ground ginger. Saltier and missing the tamarind fruitiness. Use tamari instead of soy if you need it gluten-free.

Why it matters. A fermented anchovy, tamarind and vinegar sauce that adds savoury depth plus a sharp tang. Leave it out of a marinade, stew or Bloody Mary and the dish tastes flat and one-dimensional rather than obviously wrong.

Vegan and anchovy-free, but rounder and less sharp. Whisk it completely smooth or it leaves lumps in a thin sauce.
