White Wine substitutes
The best substitute for white wine is dry vermouth: 1:1. Many restaurant kitchens prefer it because it keeps for months once opened. Slightly herbal, which usually improves a pan sauce rather than harming it.
Why it matters. In cooking, dry white wine is an acid and a solvent as much as a flavour. It deglazes a pan, lifts fond into the sauce and cuts richness. Water in its place gives you the liquid but none of the brightness.

Stock + white wine vinegar

Alcohol-free and it covers both the liquid and the acidity. What you lose is the fruit and alcohol's knack for carrying aroma, so the sauce reads a little flatter.
Dry sherry

Nuttier and more oxidised. Excellent with mushrooms and chicken, too assertive for a delicate fish or a beurre blanc.
Dry cider

Genuinely acidic and lightly fruity with real depth, though the apple note is unmistakable. Very good with pork and chicken.
Dry sake

Clean and neutral, and it deglazes just as well, but it is much less acidic than wine, which is why it needs the lemon.
White grape juice + vinegar

Alcohol-free and grapey, but much sweeter, so cut sugar elsewhere and expect a rounder, less sharp result.
Water + lemon juice

Keeps the acid and liquid roles; loses flavour.
The bare minimum. It deglazes the pan and adds acidity but contributes no flavour of its own, so the sauce needs more seasoning to compensate.
