Paprika substitutes

The best substitute for paprika is smoked paprika: Use about 3/4 the amount. The same pepper, but the smoke is assertive and will take over a delicate dish. Start below the full amount and taste.

Why it matters. Ground sweet red pepper. It contributes red colour and a mild fruity warmth rather than heat, which is why recipes call for tablespoons of it. Swap in cayenne at the same volume and the dish becomes inedibly hot.

Never swap cayenne one for one. It is many times hotter than sweet paprika, so a tablespoon of paprika replaced with a tablespoon of cayenne is inedible.
