Panko substitutes

The best substitute for panko is homemade panko: Tear crustless white bread, pulse to coarse flakes, then dry in a low oven for about 10 min without letting it colour. Essentially how panko is made. Do not let it take on colour in the oven, or it will burn during frying.

Why it matters. Crustless Japanese breadcrumbs made in large airy flakes. They absorb less oil and stay crisp far longer than fine dried crumbs, which is the whole reason a recipe specifies panko rather than breadcrumbs.
