Cornflour (UK) substitutes

The best substitute for cornflour (uk) is arrowroot: 1 to 1 1/2 tbsp arrowroot per 1 tbsp cornflour; slurry into cold liquid and add near the end of cooking. Breaks down if boiled hard, and it turns slimy with dairy, so keep it out of a custard. Excellent for fruit fillings and anything destined for the freezer.

Why it matters. In the UK, cornflour is exactly what Americans call cornstarch: a fine white maize starch used to thicken sauces and custards. It is not the same as American corn flour, which is finely milled whole corn and behaves like a flour.
