Ingredients

  • 10.5oz pasta shells
  • 2 tablespoons oilive oil
  • 1 zucchini (chopped)
  • ½ red capiscum (chopped)
  • ½ eggplant (chopped)
  • ½ brown onion (finely chopped)
  • 1 clove garlic
  • 15.4oz tomatoes (preferably with herbs)
  • 12.3oz passata

Directions

Step 1

Preheat oven 180ºC / 350ºF / Gas Mark 4

Step 2

Cook pasta as directed on packet, then drain

Step 3

Heat oil in pan, add onion and garlic till soft

Step 4

Add vegetables to pan, cook for 5 mins

Step 5

Grease a baking tray, add vegetable pan mixture, passata, tinned tomatoes, stir

Step 6

Add cooked pasta into mixture, stir. All pasta should be covered in mixture

Step 7

Cook for 25 mins in oven
