Description Use the natural sweetness and unique character of fresh roasted pumpkin to replace the regular mashed potatoes atop a mild and hearty meat stew (lamb and beef work best). Naturally low-carb and certainly paleo, this Irish-inspired casserole makes a complete meal in one dish.

  • 1lb ground lamb (or beef)
  • 1 red onion (frenched or diced)
  • 2 tablespoons butter
  • 15oz canned tomatoes (diced, preferably roasted)
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground clove
  • ¼ teaspoon ground ginger
  • ¼ teaspoon garlic powder (or 1 clove fresh garlic)
  • 2 cups hard winter greens (kale, chard, collards, spinach, etc)

Directions

Step 1

Preheat oven to 180ºC / 350ºF / Gas Mark 4. Place butter and chopped onions into a pot; stir and cook until onions sweat and start to become translucent.

Step 2

Pulse-chopped sliced red onions in a food processor

Move onions to a food processor like this mini-prep in the picture, and pulse-chop until you have much more fingertip-sized chunks. It's okay if they aren't all the same size.

Step 3

Move onions back to the pan (with the heat off). Break ground meat into chunks and spread over the onions. Then sprinkle all of the spices for the "bottom" portion of this recipe over the meat and onions.

On medium heat, stir-fry onions and meat until spices are well blended (no need to cook the meat all the way through just yet).

Step 4

Cooked meat and tomatoes, toss in the greens

Add in the diced tomatoes and broth. Simmer together for 10 to 12 minutes, stirring every few minutes. Allow liquid to reduce considerably (you're going for a Sloppy Joe type of mixture) and then remove from heat promptly. Stir in raw greens (no need to cook).

Step 5

Pumpkin pureed with eggs and cream for pumpkin shepherd's pie

While the meat is cooking, place pumpkin, cream, cinnamon, salt, and eggs into the food processor (no need to clean the onion stuff out of it first), and blend to your satisfaction. You could leave it chunky or make it a silky puree.

Step 6

Lay meat mixture into dish (pumpkin shepherd's pie)

Lay the meat mixture into a casserole or large souffle dish, spreading to make an even layer.

Step 7

Lay pumpkin on top, sprinkle paprika and nutmeg

Spoon the pumpkin mixture over the meat, creating an even second layer. Sprinkle paprika and nutmeg on top.

Step 8

Pumpkin Shepherd's Pie as pacman

Place in oven to cook for at least 15 minutes or for up to 25 minutes. Cool for 5 minutes and serve while still hot.
