Noah's Pudding (Ashura) recipe

- 1.1lb wheat
- 14oz chickpeas (rinsed and drained)
- 2.2lb granulated sugar
- 3.5oz raisins
- 3.5oz dried apricots (chopped)
- 3.5oz pine nuts
- 1 apple (peeled and chopped)
- 3 dried figs (chopped)
- 3 dried plums (chopped)
- 3.5oz dried white mulberry
- 1.8oz currants
- 3.5oz hazelnuts (chopped - and/or walnut)
- 5 tablespoons pomegranate seeds
- 1 tablespoon cinnamon
- 14oz haricot beans (dried and rinsed)
Place the wheat in a big pan, and cover with water to 5cm (2 inches) above wheat.
Cover and soak overnight.
Add 2 litres of water, chickpeas and haricot beans to the pan and get it to boil on high heat.
Then as soon as it boils, turn it down to medium-low heat and cook for about an hour. Stir occasionally and add boiling water if necessary.
Add the fruit mixture to the pan and cook for another 1 hour.
Serve in bowls (hot, warm or cold) and sprinkle with nuts, pomegrante seeds and cinnamon.
