  • 1 teaspoon butter (or olive oil)
  • 2 eggs (free range, lightly beaten)
  • 1 tablespoon feta cheese (cubed)
  • 1 tablespoon chive (fresh, snipped/finely chopped)
  • 1 teaspoon chive (fresh, snipped/finely chopped to garnish)


Step 1

Heat the pan with a little olive oil or butter. Pour in the lightly beaten eggs and roll around the pan to spread the eggs evenly around the pan. Leave to cook for two minutes on a gentle heat. Sprinkle over the crumbled feta and snipped chives. The egdes will start to bubble a bit, and the omelette will start to set.

Step 2

Using a wooden spoon or a heat proof plastic spatula, gently loosen the omelette from around the edges of the pan. Flip or fold the omelette in half and continue cooking for a minute or two. Carefully slide the omelette off the pan onto a plate and scatter an extra teaspoon of chives over the top when serving.
