Caramel-Stuffed Bourbon Balls recipe

|Description||A twist on traditional rum balls, using bourbon instead and hiding a chewy caramel in the middle. Yum!|

Pre-heat oven to 160°C / 325°F / Gas Mark 3.
Arrange pecans on a baking sheet.
Toast for three minutes; flip and toast for another two minutes.
Set aside to cool.
In a food processor, grind up vanilla wafers into a fine powder.
Add pecans and grind into a powder.
Add wafers and pecans to a large bowl containing cocoa and sugar.
Add the corn syrup and bourbon.
Using a large spoon, press around 1 tablespoon of mixture into the palm of your hand.
Press a quarter of a caramel into the center, then form the ball around the caramel.
