Ingredients

Imperial | Metric | USA
  • 1 cup pecans
  • 8oz vanilla wafers (enough to make 2 cups crumbs)
  • ¼ cup icing sugar
  • ¼ cup light corn syrup
  • ½ cup bourbon
  • 15 caramels (quartered)

Directions

Step 1

Pre-heat oven to 160°C / 325°F / Gas Mark 3.

Arrange pecans on a baking sheet.

Toast for three minutes; flip and toast for another two minutes.

Set aside to cool.

Step 2

In a food processor, grind up vanilla wafers into a fine powder.

Add pecans and grind into a powder.

Add wafers and pecans to a large bowl containing cocoa and sugar.

Mix well.

Add the corn syrup and bourbon.

Mix well.

Step 3

Using a large spoon, press around 1 tablespoon of mixture into the palm of your hand.

Press a quarter of a caramel into the center, then form the ball around the caramel.
