Ingredients
- 1 egg (use 2 egg whites for less eggy flavor)
- ¼ teaspoon baking powder
- 1 tablespoon cornstarch
- 1 tablespoon flour (I've used both brown rice flour and white whole wheat)
- ¼ cup rolled oats
- ¼ teaspoon vanilla extract
- 1 pinch salt
Directions
Step 1
Mix all ingredients together.
Pour into skillet over medium heat (use oil or spray if not using non-stick or if your cast iron pan is somewhat lacking).
Step 2
After bottom cooks (about 2 minutes), flip and let cook another two minutes.
Step 3
Turn onto plate and top with your favorite toppings.
