Ingredients
- 4 large eggs (scrambled)
- 1 small sweet potato (sliced - we used a slicer )
- 4 medium slices bacon (cut in half)
- ½ medium onion (diced)
Directions
Step 1
Cook your bacon.
Step 2
Remove bacon and chop in small pieces once it has cooled.
Step 3
Add the sweet potato and onions until soft (about 10-12 minutes).
Step 4
Add chopped bacon and mix well.
Step 5
Push everything to one side of the pan and add scrambled eggs.
Step 6
Cook until eggs are almost cooked through and then mix everything together.
Step 7
Stir for a few more minutes until eggs are cooked completely. Top with salt and pepper.
