Ingredients
- 3 cans black beans (15 oz cans - organic)
- 2 medium onions (Chopped)
- 3 cloves garlic (Medium-Large)
- 2 teaspoons cumin (Ground)
- 1 teaspoon chipotle tabasco sauce
- 2 tablespoons nutritional yeast
- 1 tablespoon fresh lime juice
- ½ ripe avocado (Sliced)
- ½ tomato (Diced)
- 1 drop tofutti (Optional)
Directions
Step 1
In a large pot, bring beans to a simmer over medium-high heat.
Add onions and garlic, stirring frequently, until onions are translucent. Stir in cumin and chipotle sauce and cook 1 minute, stirring.
Remove 3/4 of the soup and carefully purée in a blender. Return purée to pot and stir in nutritional yeast and lime juice. Spoon into bowls for serving and garnish with avocado and tomatoes.
Swirl in a tablespoon of Tofutti, if inclined. Salt to taste.
