Ingredients
- apricot preserves
- 16 medium slices white bread
- 6 eggs (beaten)
- 1 cup milk
- ½ cup sugar
- ¼ cup orange juice
- 4 tablespoons butter (melted)
- ½ teaspoon vanilla extract
- 1 pinch salt
- ¼ cup canola oil
Directions
Step 1
Spread 1 tablespoon of preserves (or whatever you prefer) between 2 slices of bread, forming 8 sandwiches.
Use a circle cookie cutter or glass, cut a circle out of each sandwich.
Mix together the eggs, milk, sugar, orange juice, butter, vanilla and salt in a bowl.
Dip the sandwiches in the egg mixture until they are well coated.
Heat about 2 tablespoons of oil in a skillet over medium heat.
Add half of the sandwiches and cook, turning once when browned.
Repeat with remaining oil and sandwiches and serve immediately.
