Ingredients
- 0.5lb skirt steaks (cut into strips)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 teaspoons chili powder
- 2 teaspoons cumin seeds
- 2 teaspoons paprika
- 1 handful cilantro (finely chopped)
- 2 tablespoons water
- 1 green pepper (cut into thin strips)
- 1 red pepper (cut into thin strips)
- 1 small yellow onion (diced)
- 1 tablespoon olive oil
- 4 tortillas (corn or flower shells)
- 12 cups monterrey jack cheese (shredded)
- salsa sauce
- sour cream
- 1 tablespoon worcestershire sauce
Directions
Step 1
Cut steak into thin strips.
Step 2
In a microwavable bowl, combine steak strips, salt, pepper, chile powder, cumin, paprika, cilantro, water, worcestershire sauce. Cover bowl loosely with microwavable wrap and cook on High for 5 minutes until steak is cooked well, stirring once.
Step 3
Remove steak from the microwave and drain excess water. Set aside.
Step 4
In a separate microwavable bowl, combine sliced pepper, diced onion, and olive oil. Cover bowl with microwavable wrap and cook on High for 3 minutes until vegetables are softened. Drain excess oil from vegetables.
Step 5
Lay out your tortilla shells, and spread sour cream and salsa over the shells.
Step 6
Sprinkle cheese on meat, then top with vegetables and the steak.
