Step 1
Empty the tomatoes of their juice, seeds and pulp.
Cut the "meat" of the tomatoes and set aside.
Preserve a small amount of juice.
Step 2
Salt the empty tomatoes.
Step 3
Cook the quinoa.
Toast the quinoa first in small amount of olive oil. Add water as to package directions. Cook as indicated.
Step 4
Sautee the minced onion, minced garlic and parsley in the rest of the olive oil.
Step 5
Add tomato meat to onion mix and sautee for 5 minutes more.
Step 6
Allow quinoa to cool slightly.
In a separate bowl, mix quinoa, onion mixture, one beaten egg, salt and pepper to taste.
Step 7
Stuff tomatoes with quinoa mixture to the top of each tomato.
Sprinkle with a good amount of parmesan cheese.
Step 8
Put tomatoes in an oiled pan.
Cook for 30 minutes at 180C / 350F / Gas Mark 3.
Step 9
Add the tops of the tomatoes and cook for an additional 10 minutes.
Step 10
Carefully cut a small hat or top off of each tomato.
