Ingredients
Topping
- 1 cup mozzarella cheese (shredded)
Topping - Optional
- 12 cherry tomatoes (red and yellow)
- 1 tablespoon onion (diced)
Sauce
- 3 tablespoons pesto (basil pesto)
Bagel
- 3 small bagels (mini bagels, whole wheat)
- 1 tablespoon garlic (crushed)
- 2 tablespoons asiago cheese (shredded)
Bagel - Optional
- 1 tablespoon butter (salted, room temperature)
Directions
Step 1
Preheat oven to 200C / 400 F / Gas Mark 6.
Step 2
Mix butter with crushed garlic.
Step 3
Slice bagels in half.
Step 4
Place bagels cut side down on a cookie sheet and brush them with the garlic butter mixture.
Step 5
Bake bagels for 3-4 minutes until butter is fully melted.
Step 6
Shred some Asiago cheese over the bagels and return to oven for 1-2 minutes or until cheese has melted.
Step 7
Remove the partially toasted bagels from the oven, spread with pesto and add toppings.
Step 8
Sprinkle shredded mozzarella and Asiago over the toppings and top with a dash of cayenne.
Step 9
Return to oven for about 5-7 minutes or until the cheese has fully melted.
