Ingredients

Imperial | Metric | USA
  • 225g plain flour
  • 1 pinch of salt
  • 1 medium egg
  • 300ml milk (or half milk and half water)
  • 25ml olive oil (or vegetable oil or butter)

Optional

  • 300g strawberries
  • 300g blueberries
  • 100ml maple syrup

Directions

Step 1

Pancake batter mixture - flour with egg in the centre well

Put the flour and salt into a mixing bowl.

Make a well in the centre.

Place the egg into the well.

Step 2

Prepared pancake batter

Mix this up and stir in some of the milk.

Keep stirring and adding milk until the mixture becomes smooth and lump-free.

Note - you may not need all of the milk.

Chill the mixture (batter) for 30 minutes.

Step 3

Put a little olive oil into a frying pan.

Heat the frying pan until the oil starts to smoke.

Use a ladle to pour and spread the batter into the pan.

Cook for around 30 seconds, then flip/toss the pancake over and cook the other side for an additional 30 seconds.

Ensure that the pancake is cooked on both sides.

Repeat this process until you have used all the batter.
