Ingredients
- 4oz chicken (chopped up finely)
- ¼ cup quinoa (rinsed)
- 2 medium eggs
- 1 tablespoon coconut oil
Extra
- ¼ cup red onions (diced)
- 1 medium portobello mushroom (diced)
- 6 medium olives (sliced)
Directions
Step 1
Rinse and start cooking the quinoa.
I used black quinoa in this recipe.
It's usually a 3 to 1 ratio of water to quinoa.
Step 2
Chop up the red onion, portobello mushrooms, and olives and sautee them in a pan with 1/2 tablespoon coconut oil until they cook down.
Step 3
Finely chop up the chicken.
Step 4
Put everything you have into a bowl and mix it together.
That's chicken, eggs, the cooked quinoa, and the cooked vegetables.
Its going to look a little thin and won't hold together by itself.
Step 5
Prepare a burger sized pan by heating it on medium and melt the remain 1/2 tablespoon of coconut oil in it.
Step 6
Place have the mixture into the burger sized pan, cover, and let it cook until the bottom sets up nicely.
Step 7
Take a spatula and carefully flip the burger.
The egg should be set up enough so that it should flip easily.
Cook the other side.
Step 8
And done! Enjoy with some greens!
