Ingredients
- 3 medium eggs
- 4 chestnut mushrooms (sliced)
- 1 handful common mallow
- knob butter
- 2 tablespoons olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
Directions
Step 1
Heat the olive oil and butter in frying pan.
Add the mushrooms and fast fry for 3 mins.
Take the mushrooms out of the pan once cooked and set aside.
Step 2
Whisk the eggs in a bowl and add salt and pepper.
Roughly chop the Mallow then add to the whisked eggs.
Step 3
Put more oil and butter to the frying pan if required, then place egg mixture in the pan and cook folding the eggs as you go until set to your liking.
Place the mushrooms on top of the omelette, fold and serve immediately.
