Directions

Step 1

Cream sugar, lemon juice and lemon rind being heated.

Heat the cream and sugar together in a pan until the sugar has dissolved, then bring to the boil.

Then add the lemon juice and rind and stir until the mixture thickens.

Step 2

Lemon posset mixture being seived.

Sieve the mixture into a bowl.

Step 3

Pour into serving glasses and allow to cool before serving.
