Kale, Strawberry and Pumpkin Seed Salad recipe

|Description||Healthy and visually tantalizing nutrient-rich kale salad featuring sweet strawberries, cucumbers, pumpkin seeds and mint. Filling enough to be served as a main course!|

- 1 bunch kale (finely chopped)
- 4 medium strawberries (thinly sliced)
- 1 medium cucumber (diced)
- 3 sprigs mint (finely chopped)
- 2 tablespoons raw pumpkin seeds (substitute with nuts/seeds of your liking)
- 2 medium limes (or lemons - juiced)
- 1/3 small onion (finely chopped)
- 2 tablespoons extra virgin olive oil
- 1 pinch salt (To taste)
- 1 pinch pepper
Finely chop kale into pieces or ribbons and squeeze juice of 1-2 limes (or lemons) and drizzle EVOO onto kale in a large bowl. Massage mixture for approximately 1 minute to "wilt" and soften kale.
Dice cucumbers, chop onions and add to kale.
Gently toss together items. Serve on a plate and decorate with pumpkin seeds and sliced strawberries. Enjoy!
