Ingredients
- ¼ cup water
- 1 yellow onion (chopped)
- 8oz button mushrooms (chopped)
- 1 medium bell pepper (red and green)
- 4 cloves garlic (minced)
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 can crushed tomatoes (28 oz can)
- 2 black beans
- 1 cup water
- 1 green chili (4-oz can, diced)
- 1 can chipotle peppers (minced)
Directions
Step 1
Heat 1/4 cup of water in an 8qt dutch oven.
Add the chopped onion, red and green bell peppers, and garlic, and simmer in water till softened, about 5 minutes
Step 2
Add crushed tomatoes, chili powder, cumin, water, beans, chipotle chili pepper, and green chilis with water to pan.
Bring to a boil.
Cover and reduce heat to keep a low simmer. Simmer for 1 hour.
