Directions

Step 1

Cook pasta until al dente.

Rinse with cold water and set aside.

Step 2

Heat canola oil in a large skillet or Dutch oven over medium-high.

Add turkey, onion and garlic.

Cook 5 minutes or until turkey is no longer pink.

Step 3

Add bell pepper and carrots and saute 5 minutes.

Step 4

Add all other ingredients, including pasta, and bring to a boil.

Turn heat to low and allow to simmer 15 minutes.

Step 5

Spoon into bowls and top with sour cream, shredded cheese, diced onions etc. and enjoy!
