Ingredients
- 1 cup rolled oats (old fashioned oatmeal)
- 1 cup whole wheat flour
- ½ cup sugar (or Agave nectar)
- 1 cup baby spinach leaves (finely chopped)
- ½ cup unsweetened applesauce
- 2 medium egg whites
- 1 teaspoon baking powder
- 1/3 cup dates (can substitute any dry fruit)
- ½ teaspoon baking soda
- 1 heaped tablespoon flax seed
- 1 heaped tablespoon chia seed
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Directions
Step 1
Soak oats in milk for 1 hour (refrigerate).
Step 2
Chop spinach and dry fruit into fine pieces
Step 3
Mix all ingredients into bowl until combined
Step 4
Spoon mixture into muffin tin or muffing cups and bake at 200°C / 400°F / Gas Mark 6 for 23-25 minutes.
