|Description||Satisfy your peanut butter & chocolate fix with this healthier version of the original buckeyes. Less calories & fat, more fiber, protein and healthy Omega 3s!|

- 9 graham crackers (ground up - Trader Joes makes wonderful, old-fashioned style grahams!)
- ¾ cup natural peanut butter
- ¾ cup ground flaxseed
- 3oz dark chocolate (slightly less than an average-sized bar)
Mix crushed graham crackers, flaxseed and peanut butter, stirring until well combined.
Roll heaping tablespoons of mixture into 2.5cm (1") balls and place on a wax paper-lined baking sheet. Insert 1 toothpick into each and freeze for 30-45 minutes.
Right before removing from freezer, melt dark chocolate in a double boiler (or heat in a bowl placed in a small saucepan with water). Dip each buckeye into the chocolate and place back on the wax paper-lined baking sheet.
Remove toothpicks and refrigerate until ready to serve.
