Ingredients
- 2 cups all-purpose flour
- 1 ½ cups whole wheat flour
- 2 cups splenda (or other granulated sugar substitute)
- 1 cup granulated sugar
- 2 teaspoons baking soda
- 1 ½ teaspoons salt
- 4 teaspoons pumpkin pie spice
- 4 eggs
- 1/3 cup oil
- 2/3 cup apple sauce (plain)
- 2/3 cup water
- 2 cups pumpkins (pureed)
- 1 ½ cups chocolate chips
Directions
Step 1
Preheat oven to 180C / 350F / Gas Mark 4.
Step 2
Combine all dry ingredients in a large mixing bowl, except chocolate chips.
Step 3
Whisk eggs slightly in medium mixing bowl and then add the rest of the wet ingredients.
Whisk to combine.
Step 4
Gradually add the wet ingredients into the dry ingredients just until combined and then fold in the chocolate chips.
Step 5
Pour the batter into greased pans.
You can make two loaves, 24 muffins or 1 loaf and 12 muffins.
Step 6
Bake until a toothpick inserted in the center comes out clean, well maybe with a little chocolate on it :)
Muffins about 20 minutes, bread about 50-60 minutes.
