Description These scone are delicious eaten slightly warm with a spoon of homemade jam and whipped cream. Crisp and golden on top whilst being soft and light in the inside.

  • 7.9oz self raising flour (sieved)
  • 1.4oz butter (or margarine - room temperature)
  • 0.9oz caster sugar
  • 2.6oz dried fruit
  • 1 pinch salt
  • 5fl oz milk
  • flour (for kneading & rolling)

Directions

Step 1

Pre-heat the oven to 220°C / 425°F / Gas Mark 7 and grease a baking sheet.

Step 2

Sifted flour being added to a bowl

Sift the flour into a bowl and rub the butter or margarine into it rapidly, using your fingertips.

Step 3

Add the sugar, salt and dried fruit to the mix and stir in.

Step 4

Using a knife add the milk little by little and mix

Step 5

Scone mixture kneaded into a soft dough

Flour your hands and knead the mixture into a soft dough, adding a drop more milk if it feels at all dry.

Step 6

Scone dough being rolled with a rolling pin to a 2cm thickness

When you have a nice soft dough turn it out onto a floured surface and roll out to around 2 cm (4/5") thick and cut out scones with your choice of cutter.

Step 7

Dust each of your scones with a little bit of flour.

Step 8

Crisp, golden scones on a baking tray fresh from the oven

Bake near the top of your oven for about 12-15 minutes or until they are crisp and golden in colour.

Step 9

Scones cooling on a wire rack

Cool your scones on a wire rack, and eat whilst they are still slightly warm.
