Ingredients

Imperial | Metric | USA
  • 5 eggs
  • ¾ cup self raising flour (wholemeal preferred)
  • ¼ cup vegatable oil
  • 1 zucchini (grated)
  • 1 carrot (grated)
  • ½ brown onion (finely chopped)

Directions

Step 1

Preheat oven 180ºC / 350ºF / Gas Mark 4

Step 2

Beat eggs in large bowl

Step 3

Add flour into the eggs, whisk to a smoothish paste

Step 4

Add oil to the egg mixture, whisk to a smooth paste

Step 5

Add carrot, zucchini, onion (add cheese if using) to the bowl, stir until all ingredients are combined

Step 6

Pour mixture into a loaf tin

Step 7

Cook in oven for 25-30 mins
