Step 1

Crumpet ingredients mixed in a bowl

In a large mixing bowl combine all ingredients starting with the liquid and ending with the yeast. Beat well for 2 minutes. Using a stand mixer like a kitchen aid set at about 4-5.

Cover bowl and let stand at room temperature (out of any drafts) for 1 hour. I put mine in the oven with no heat or lights. When done it will look very bubbly.

Using an electric griddle or fry pan set to 360°C / 325°F / Gas Mark 3. A large griddle as shown on the right is handy, but anything will do. Using English muffin rings (or other circle about 9cm / 3 3/4" round) will work. The griddle should be cooler than what you use to make pancakes. Lightly grease rings and griddle. Using an ice cream or muffin scoop ( about 1/4 cup) put dough in each ring. It will not fill them up.

In 4 minutes remove rings, crumpets should be set. cook another 6 minutes, for a total of 10 minutes. They should be dry around the edges and top, bottoms golden brown. You can flip them at this point, (I know, crumpets should be white, but alas this will be great with a little color on top.) Cook for another 3-4 minutes. Cool on wire rack.

Step 5

Serve warm or lightly toasted with butter/jam/honey, or any topping of your choice, such as Double Devon Cream and berries. My kids like to use them to make breakfast sandwiches with eggs, bacon, and sausage. These freeze very well.
