Courgette, Parmesan and Dill Frittata recipe

Heat the olive oil in a frying pan.
Add the onions and courgettes and gently fry for 7-8 mins.
Whisk the eggs in a bowl and add the chopped dill, salt and pepper.
Grate the parmesan then add to the egg mixture.
Place egg mixture into the pan and stir into the other ingredients.
Cook on a low heat for 5 mins occasionally folding over the mixture, then place under the grill until the eggs have set to your liking.
Serve immediately or it also eats well cold.
