Ingredients
- 1 cup butter
- 1 cup onions (chopped)
- ½ cup pine nuts
- 8 cups fresh bread (cubed)
- 1 tablespoon fresh sage leaves (minced)
- ½ cup scallions (chopped)
- ½ cup fresh parsley (chopped)
- salt (to taste)
- pepper (to taste)
Optional
- ½ cup bacon (cooked and chopped)
Directions
Step 1
Preheat the oven to 190°C / 375°F / Gas Mark 5.
Step 2
Place the butter in a large skillet over medium heat. When melted, add the onion and cook, stirring until it softens. Add the nuts and cook, stirring almost constantly, until they begin to brown, about 3 minutes.
Step 3
Add the bread cubes and sage. Toss to mix. Turn the heat down to low and add salt, pepper, and scallions. Toss again and add parsley along with the bacon and stir. Turn off the heat. At this point you can refrigerate for up to a day before proceeding.
Step 4
Place the stuffing in a casserole dish 23x33cm (9x13") and bake for about 45 minutes or until crisp and heated through.
