Chocolate covered peanut butter bars recipe

Ingredients
Topping
- 1 cup chocolate chips
- 1 heaped tablespoon peanut butter
Bar
- 1 cup margarine (or butter - softened)
- 2/3 cup peanut butter (I prefer chunky)
- 2 eggs
- 2 cups flour
- 2 cups quick oats
- 1 cup granulated sugar
- 1 cup light brown sugar
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup shredded coconut
- 1 cup chocolate chips
Directions
Step 1
Preheat oven to 350F / 175C / gas mark 4.
Step 2
Combine margarine or butter, peanut butter and eggs in a large bowl. I prefer using the paddle attachment and my Kitchenaid mixer since the dough is very stiff.
Step 3
Add in the flour, oats, sugars, baking soda, salt, coconut and chocolate chips and mix just until combined.
Step 4
Press the dough into a 10"x15" baking dish making as level as possible. I usually just use my hands.
Step 5
Bake in preheated oven for 25 minutes or until just set in the middle and lightly browned on the edges.
Step 6
Allow to cool on the counter or you can put in the fridge if you are in a hurry. Once you smell them, you may be extra motivated to get them completed so you can taste them:)
Step 7
Microwave the 1 cup chocolate chips and the tablespoon of peanut butter for 30 seconds at a time until you can mix them smoothly together.
Step 8
Spread the chocolate topping evenly over the cooled bars with a spatula or offset knife and refrigerate to harden.
