Directions

Step 1

Muffin mixture in a bowl

Place the flour and caster sugar into a bowl and create a well in the middle for the other ingredients.

Mix the eggs, vanilla extract, milk and margarine and then pour it into the bowl with the dry ingredients.

Mix well until it is lump free and then break the chocolate into small pieces and add them.

Step 2

Muffin mixture in a muffin tin

Pour the muffin mixture into a muffin tin filling each mould up to two thirds full.

Place a block of chocolate into the middle of each muffin. Then sprinkle some sugar over the top of each.

Step 3

A cooked muffin in a muffin tin

Cook for around 20 minutes in a preheated oven at 200ºC / 390ºF / gas mark 5. After 18 minutes or so check to see if they are cooked enough.

Insert a knife into one of the muffins and if no mixture is on the knife then they are cooked!

Allow to cool for at least 5 minutes before eating.

    Hi,
    I know what you mean, it's my photo and I meant to sprinkle on the sugar but I only had sugar cubes so it went a bit wrong. If you make them, please add your photo to show how they should look!

    I think it is a good recipe but instead of chocolate pieces why not use chocolate chips it tastes much better I have tried it.

    This recipe is very easy and it's not at all complicated. I used dark chocolate for this and it tastes gorgeous! Also on the top I put on some Betty Crockers Rich and creamy icing chocolate fudge which you can buy anywhere.

    I made these with my seven year old cousin and we had so much fun. The recipe was really easy for her to follow and the whole family loved what we made.

    We used smartie chocolate bars instead of plain chocolate and did melted plain milk chocolate as the icing so that we could decorate the cupcakes as well. They turned out great I would definitely recommend this simple recipe.

    Just made two batches of these, one with choc chips the other with glacé cherries. They are yummy!! If I make them again I think I will blend the marg with the butter and sugar rather than mixing in with all the other wet ingredients at the end as it was quite hard to get it all mixed in, but other than that this is a really quick, easy and fairly child friendly recipe!!

    I guess my muffin cases are smaller, I got more than 5. I cook it 100g milk and 100g dark chocolate, which was nice, but I'm gonna try using only 100g milk chocolate. And it's even grate warm while chocolates are still creamy :)

    I agree there maybe is a little too much chocolate, even without the chunk in the middle. I used 200g of choc chips and was incredibly chocolately (still scrummy tho) would probably halve it to 100g of choc.

    I loved this recipe but I only used half the amount of chocolate and didn't put the chunk in the middle. It needed a little something extra though, it seemed to be missing something. The Hubby reckoned that a touch of salt might work so next time I'll put a touch in to see.

Would you tweak this recipe? If so, how?

e.g. Add half a chopped onion, use less butter, shake not stir...
