Ingredients
- ½ cup butter (softened)
- ½ cup light muscovado (brown) sugar
- ½ cup sugar
- 1 large egg
- ½ tablespoon vanilla
- 1 ¾ cups all-purpose flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 packet milk chocolate chips
Directions
Step 1
Preheat oven to 175ºC / 350ºF / Gas Mark 4.
Spray a muffin tin with cooking spray.
In a mixer, cream the butter and sugars until light and fluffy.
Add egg and vanilla and beat until combined.
Add the dry ingredients to the wet ingredients and beat until combined.
Add chocolate chips (mins 1/2 cup) and stir.
Step 2
Place 1/2 cup of chocolate chips in a Ziploc bag and lay flat in microwave.
Spread out chips in a single layer and microwave for 30 seconds.
Flip bag and microwave for about 15 seconds more until all the chips are softened.
Using half of cookie dough, scoop about a tablespoon and flatten out a bit and place in the bottom of muffin tin.
Cut a small tip in the corner of Ziploc bag and squeeze a layer of chocolate over the cookie.
Scoop and flatten the remaining dough and place on top of chocolate layer.
Step 3
Bake for about 15 minutes, until the edges are just browned.
As soon as they come out of the oven, run a knife around the edges to make for an easy removal later.
Cool completely then remove from muffin tin.
