Ingredients
- 5 ripe bananas (cut into chunks)
- ¼ cup unsweetened cocoa powder
- 1 cup coconut milk
- 1 teaspoon pure vanilla extract
- ¼ cup peanut butter (or your favorite nut butter)
- 1 graham cracker pie crust (make it yourself, or use store bought)
- 2 tablespoons dry roasted peanuts (chopped)
- ½ cup dark chocolate chips
Directions
Step 1
Put banana chunks, cocoa powder, vanilla, coconut milk and nut butter into a blender or food processor, and blend until smooth and creamy. It should look similar to cake batter. If it seems too thin, add another banana or more nut butter.
Step 2
Pour mixture into pie shell, cover and freeze for at least four hours.
Step 3
Top with chopped peanuts and chocolate chips.
Step 4
To cut, take out of the freezer and let the pie sit at room temp for about 10 minutes. Run knife under hot water for several seconds to help make cutting easier.
