Ingredients
- 15 pieces chicken (tpically legs but wings can be included )
- 1 teaspoon salt
- 2 teaspoons pepper
- 2/3 teaspoon cinnamon
- ½ teaspoon ground cayenne pepper
- 4 large potatoes (half boiled cut into wedges)
- 22fl oz tomato sauce
- 28oz tomatoes (diced, can be from a can)
Directions
Step 1
Season the chicken pieces with the spices and place in a 4 inch deep Pyrex pan.
Step 2
Broil the chicken for approximately 10 minutes
Step 3
Mix the sauce ingredients, heat and adjust seasoning to your own taste.
Step 4
Spread a small amount of the sauce directly on the chicken pieces, then layer the potatoes on top of the chicken.
Spread the rest of the sauce to cover the top layer of potatoes.
Step 5
Bake in a 200ºC / 400ºF / gas mark 6 pre-heated oven for about 45 minutes.
