Ingredients
- 9fl oz organic milk
- 1 large organic egg
- 1.9oz wholemeal flour
- 1.9oz buckwheat flour
- 5.3oz blueberries
- coconut oil (for frying)
- maple syrup (for drizzling)
Directions
Step 1
In a large bowl, whisk the milk and egg together, then gradually add the flours and whisk well until you have a smooth batter. Stir in the blueberries.
Step 2
In a frying pan, heat 1 tablespoon of oil. Once hot, spoon in a small ladleful of the batter and keep in a small round shape.
Step 3
After 2-3 minutes, flip and cook for the same amount of time. Repeat until you have roughly 8 pancakes.
