Ingredients
- 1 cup baby spinach leaves
- ½ tomato
- coriander
- 1 cup beans (Raw or Steamed)
- hommus (free from dairy)
- 1 chicken breast (Diced into 1 inch pieces)
- paprika
- 1 clove garlic (Finely chopped or minced)
- coconut oil
Directions
Step 1
In a small frying pan, fry the minced garlic in coconut oil over medium heat until just brown.
Cover chicken pieces with paprika and add to pan.
Step 2
Meanwhile, put baby spinach leaves on a plate, with slices of tomato and coriander leaves.
Put a bunch of beans on the side and a big spoon of hummus in the middle.
Step 3
Once cooked, spread the chicken over the salad and enjoy!
