Blackberry Puree

  • 1 pint blackberries

Sage Simple Syrup

Soda Mix

  • 1 tablespoon blackberry puree
  • 1 tablespoon sage simple syrup
  • 8oz plain sparkling water

Directions

Blackberry Puree

Step 1

Puree blackberries in a blender until smooth, and strain the seeds out. Set aside. Can be refrigerated for 3-4 days in an air tight container.

Sage Simple Syrup

Step 2

To make sage simple syrup, bring one cup of water and once cup of sugar to a boil. Remove from heat as soon as sugar is dissolved. Toss in 3-4 sage leaves and bruise them with the back of a spoon to release the essential oils into the simple syrup. Let the leaves steep for 10-15 minutes, then remove. Store sage simple syrup in an airtight container in the fridge for up to 7 days.

Soda Mix

Step 3

In a glass mix 1 tablespoon of blackberry puree with 1 tablespoon simple syrup (more or less to taste).

Step 4

Pour sparkling water over berry-syrup mixture. Garnish with more sage leaves and blackberries if desired.
