Ingredients
- 7oz be-ro self raising flour
- 7.9oz caster sugar
- 0fl oz salt
- 0.9oz cocoa powder (sieved)
- 3.5oz margarine
- 2 medium eggs
- 3fl oz evaporated milk
- 3fl oz water
- 3 drops vanilla essence
Directions
Step 1
Heat oven to 175ºC / 350ºF / Gas Mark 4.
Grease two 20cm (8") tins, not loose-bottomed as the mixture would run out.
Step 2
Mix flour, sugar, salt and cocoa.
Step 3
Rub in margarine.
Beat eggs with milk.
Step 4
Stir egg mixture, essence and liquids into the dry ingredients and beat well.
Step 5
Place mixture in prepared tins and bake for about 30-35 minutes.
Step 6
When cold sandwich and top with Milk Chocolate Icing.

I have always used this chocolate cake recipe, it's a family favorite, the best ever, it has weight and substance... beautifully chocolately. -
I always baked this for my kids birthday cake - made houses hedgehogs etc out of the cake mix always went down well. Now make it for myself as a treat and memory to those days... love it. So easy but can look amazing with some special icing..

This cake has been a favorite of mine for many years now. I do three layers and sandwich together with kirsch cherry jam double cream and strawberries. It makes a delicious gateaux.
