Directions

Step 1

Mix together the flour and salt and rub in the butter.

Step 2

Scone mixture in a bowl

Stir in the sugar and then the milk to get a soft dough.

Step 3

Scone being cut out with a cookie cutter

On a floured surface knead the dough lightly. Pat the dough to around a 2cm thickness and then use a cookie cutter.

Step 4

Scones before being put in the oven

Place the scones onto a greased baking sheet or onto parchment paper. Brush milk onto the scones so that they will brown in the oven. Cook in a pre-heated oven at 220ºC / 430ºF / gas mark 7 for 12-15 minutes until golden brown and well risen.

Step 5

Scones cooling down on a wire rack

Allow to cool on a wire rack before storing for up to a week in an air tight container. Although they are best served warm!

    I tried them there (I am terrible at cooking and baking) managed to make them but they are a bit flat? Did I maybe pat the dough down too much?

    I used this recipe when I used to make them for the hotel I worked for, and every day I came to work I had to make another batch, so you see they were well loved!
    I don't work there now but I still make these at home and always went down a treat. The recipe was passed to me from my mother as she made them on a regular basis for us at home.

    I do my scones like this and they are the best. Are also good if you use some water for some of the milk. Putting some water in cake and scone recipes makes them lighter

    Used this recipe to check metric measures for my mum's recipe - which also uses no eggs or extra baking powder. My mum's scones are the best, I dont like these over risen, puffed up things that seem to be sold at the moment - not proper scones in my opinion! For divine cheese scones leave out sugar and add a good load (as much as you dare!!!) of cheese...yum, even better the day after....

    Very good, easy to follow recipe. Only thing I would say is to perhaps leave them in 5-10 mins longer, as were still a little doey inside.

    Very nice to a very sticky consistency to work on the worktop when kneading and using cutters. Gorgeous to eat though, kind of worth the sticky fingers and constant washing of hands!!!

Would you tweak this plain scone recipe? If so, how?

e.g. Add half a chopped onion, use less butter, shake not stir...
